Vegan Weekly Roundup: Thanksgiving Ideas, Vegan Bacon and Quinoa Wraps

As we move closer and closer to Thanksgiving (it’s less than two weeks away!), I’m starting to get my lists together. Are you guys getting excited? I know I am. So far, I’m planning on sticking to the basics, much like I did last year, but I do want to tweak a few things for a little variation. I’ve been looking at recipes online, and found a few, along with a few other vegan-related items, that I think you’ll enjoy.

I’m making my Sweet Potato Balls for a Thanksgiving potluck between friends, so I don’t think I’m going to include them on my Thanksgiving Day menu this year. In its place, I’m going to make this Savory Vegan Butternut Squash Au Gratin W/Crispy Shallots.

Soy substitutes if you find yourself allergic to it or just wanting to reduce your consumption.

These quinoa wraps look healthy and delicious! (I think I may need to buy this cookbook to help with my never-ending lunch dilemma.)

Whoa. Vegan bacon from king oyster mushrooms.

I love reading about athletes who decide to go vegan — despite criticism from fellow athletes.

Instead of a pumpkin pie or pumpkin cheesecake, I’m going to make a pumpkin roll this year.

  1. LOL. Thank you. This is my first Thanksgiving since giving up the moo and I’m trying to get a game plan together. We are potlucking it, so the traditional bits will be there, I just want to make sure I (and anyone who wants to see why I feel good) can, and want to eat.

    • I was worried about veganizing all my favorite Thanksgiving sides when I first tried it, but I was surprised at how easy (and delicious) it turned out to be. Good luck and I’m looking forward to reading about it on your blog 🙂

    • Vegan bacon from eggplant? That sounds really good! I keep reading about all these great recipes that use a food dehydrator. I think I might have to ask for one for Christmas.

  2. I got some great tips after reading about your meal last year, thanks! I’m glad I picked up Whole Foods cranberries today, I’m not sure if typical ones have gelatin either, but I will have to find out. I LOVE, I mean really, really love canned whole cranberry sauce every year. Another thought, why are vegan marshmallows so expensive…I saw the Dandies brand today and my jaw dropped! Loved your adaptation of green bean casserole too :). Enjoy your meal this year.

    • Vegan marshmallows are ridiculously expensive. I don’t get it. But I’m so glad you found helpful info in my post. I plan on posting more recipes to go with my Thanksgiving post for this year, so stay tuned. 🙂
