My name is Amanda. Several years ago, my husband and I decided to make the leap from being vegetarian to being vegan. It was the best decision we ever made. With the help of an arsenal of cookbooks and resources, I’ve made delicious meals over the years and discovered a passion for food and cooking that I never had before. I also discovered that I have a knack for putting together weekly menus that adhere to a strict budget and make the most of all of the ingredients so that nothing goes to waste.
Though I’m not quite there yet, my goal with The Peaceful Pantry is to post weekly meal plans and respective grocery lists to take the guesswork and intimidation out of vegan cooking.
